Each harvest of Nuvo Olive Oil is tested for a chemical analysis by 2 different 3rd party laboratories. Our production methods yield a certified E.V.O.O. which is very low in oleic acidity and peroxide values. The lower the oleic acidity levels the higher the smoke point and thus the hotter the oil can get for cooking at high temperatures. We took an extra step to get an abundant amount of Polyphenols/vitamin counts. We produce a very rare/high grade E.V.O.O. with polyphenols in the rare 600 parts/million, this Olive Oil is packed with tons of vitamin E & A, a fresh taste and superior quality second to none. Finally we hosted a blind oil tasting with industry experts to see what we may learn about our families olive oil taste. A very green "grassy" oil perfect for combining with tomatoes, arugula, kale and a little garlic, lemon and sea salt will always go a long way in any application. The Poly-phenol or the abundance of antioxidants (mostly vitamin E & A) found ONLY in FRESH, properly produced and correctly stored Olive Oil is sadly, quite difficult to come by. Loose labeling laws and corporate greed have duped Americans into buying oil that says "extra virgin" on the label yet they rarely meet the standards of Extra Virginity. In many cases big box super markets offer large quantities of oil's at cheap prices simply because the product is water down with grape-seed or canola oil. UC Davis did a study on the quality of olive oil on store shelves in 2010 and found that 65% was mislabeled, fraudulent (not olive oil), or even rancid.
