The whole idea of an heirloom catering company is that nothing goes to waste, ever. All our meats come whole -pigs, lamb, fish- and after carving and using the usual cuts for cooking, we take all scraps and create pasta sauces, make stock with bones-we use every last piece of the animal. We are committed to leaving the smallest ecological footprint possible - working with small farms and making beautiful and creative food. We have our own garden, our own 22 person tasting room (The Salon) where we team with other chefs, farmers, wine makers, baristas and food policy advocates, and we also have a food truck that primarily is sold to private events and always features a seasonal menu.
