Bill Cleary was a pioneer in the use of Soy Lecithin in the confectionery and baking industry. During the late 1930's and early 1940's, Lecithin became an important ingredient as a viscosity reducer in the manufacturing of chocolate. A fraction of a percent of Lecithin replaces a significant amount of cocoa butter which results in a substantial cost savings. Today, Lecithin has a multitude of uses. In the baking industry, it is extensively used for cakes, waffles, and donuts. In the non-food industry, it is used widely in products such as adhesives, tapes and paints. In addition to our Lecithin line, we manufacture a complete line of release agents used in both confectionery and baking industries.
